So...as most of you all know, I am not a kitchen diva. However, I have really been wanting to make this new recipe. Tonight I got my chance....
The Recipe:
12 oz orecchiete (or some other short pasta) (3 cups)
1 bunch broccoli (1 1/2 lbs), cut into florets
1/2 cup walnuts, roughly chopped (can be omitted, obviously)
1/4 cup olive oil
2 cloves garlic, chopped
Kosher salt and black pepper, to taste
2 tbsp. unsalted butter
1/4 cup grated Parmesan
> Heat oven to 400 degrees. Cook pasta. Reserve 3/4 cup of the cooking water. Drain the pasta and return to the pot.
> Meanwhile, on a baking sheet, toss the broccoli, walnuts (if desired) oil, garlic, salt and pepper. Roast, tossing once, until the broccoli is tender (18 to 20 min.).
> Toss the pasta with the broccoli mixture, butter, and 3/4 cup of the reserved pasta water. Sprinkle with Parmesan before serving.
